Chili




Ingredients

5 lbs ground round 3 cans "hot" chili beans
3-4 large onions, diced salt and pepper
2 cloves garlic, minced 2 T cumin
celery, 3-4 stalks, diced 4-5 T. hot chili powder
1 small green pepper, diced 3 teasp oregano
2 large cans tomato sauce (plain) 1 teasp paprika
1-2 large cans whole tomatoes 1/2 teasp crushed red peppers

Note: You may want to add extra spices

Sautee onions, garlic, green peppers, celery in 1/4 cup vegitable oil. Add meat, breaking it up as it browns. Add the rest of the ingredients. Cook 1-2 hours. Taste after cooking for 1 hour and add additional seasoning to taste.

This is excellent served over macaroni noodles with saltene crackers.
